With a hardness of approx. 62 Rockwell, the sharpening steel is relatively resistant to damage and ensures precisely sharpened knives for the long term. You only need to drag the knife over the steel a few times just before cutting meat or other dishes.

Sharpening steels with a ridged, highly carbonized and hard chrome-plated steel ensure a good sharpening result.

With a hardness of approximately 62 HRC this sharpening steels are relatively insensitive to damage.
